Spring has sprung, which means the introduction of a new food mood—lighter, brighter!—and more entertaining. Friends and family are ready to come out of hibernation and spend quality time together.
But playing host these days is no easy task: There are dietary restrictions, tastes and health concerns to consider. Luckily, I recently discovered a way to ease the stress of making all your brunch guests comfortable: Decadent Vegan + Gluten Free Parfaits! These are a delicious alternative the whole family can enjoy.
Presenting food family-style, and allowing guests to pick and choose elements, is an excellent way to make everyone invited feel more at ease, no matter what their dietary restrictions. Serve with fresh berries and chopped banana and allow guests to fill their jars or glasses themselves, as they please. And a toast with The Morning Glory cocktail completes a slam dunk spring brunch!
Decadent Vegan + Gluten Free Parfaits
Granola
Ingredients:
5 cups gluten free rolled oats
1/2 cup maple syrup (more if desired)
1/3 cup chopped walnuts
1/3 cup chopped pecans
1/3 cup chopped almonds
1 tsp fine grain sea salt
1.5 tsp cinnamon
1/4 cup coconut oil heated to liquid
*1/2 cup unsweetened coconut flakes
Instructions:
1.Preheat oven to 325 degrees and line a large baking sheet with parchment paper.
2. In a large bowl, combine all of the ingredients except the coconut flakes. Mix well.
3. Spread the granola mixture evenly onto the pan.
4. Bake 10 minutes and then remove from the oven. Stir in the unsweetened coconut flakes to the granola mixture.
5. Bake an additional 10-15 mins until the mixture is golden brown.
Vegan Chocolate Mousse
Ingredients:
32 oz silken tofu
1/2 cup unsweetened cocoa powder
1 tbsp. vanilla extract
1/2 cup real maple syrup
Instructions:
1. Add all of the ingredients to a ninja, blender or food processor.
2. Blend until the mixture reaches a creamy consistency.
No brunch is complete without a delicious beverage! The Morning Glory is an extremely popular cocktail with my clients, when they’re in the mood to indulge. 1oz Gin or Tequila
1oz any red Amarro
1oz grapefruit juice
Top Prosecco
Rosemary Sprig garnish
